Happy Friday! Enjoy the ones you’re with this weekend. And the little moments that can become so much bigger when you let them. Did I mention that I have started a photography “class” with the boys? I’ve been told I’m the teacher. I’ll tell you more about that later… it’s pretty fun.

I thought I’d leave you with a picture I took of my sister’s gorgeous wedding bouquet. It’s hard to believe that it was almost a month ago that she got married! And I can’t believe she’ll be moving away in less than a week!

Family Time

We had a family photo shoot last night with the lovely and talented Rachel of Rachel Ray Photography! I thought I’d share a few! I love how she’s captured us laughing, since we do a lot of that! I feel so incredibly blessed to have these guys in my life. If you’re curious, Rachel has posted a bunch on her blog.

I’m heading to this little guy’s preschool graduation today! (Oh no! Possible change of plans – he just woke up with a fever!!)

Pumpkin & Apple Spice Muffins

Sorry for the silence around here last week! Between the teachers strike and sick children I found myself very busy… and then I ended up in the ER, and well, there was not much energy left after that. All is well now, and Spring Break is here… so, there will be some pajama days in the future!

PUMPKIN & APPLE SPICE MUFFINS [GLUTEN FREE]

INGREDIENTS:

  • 1 2/3 cups gluten free all purpose flour
  • 3/4 teaspoon xanthun gum
  • 2 tablespoon ground flax seeds
  • 1 cup sugar
  • 1 tablespoon pumpkin pie spice**
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup canned pumpkin
  • 1/2 cup butter or margarine, melted
  • 2 large eggs, lightly beaten
  • 1 apple, peeled and finely chopped

Topping:

  • 1 teaspoon pumpkin pie spice**
  • 3 tablespoons sugar

DIRECTIONS:

  1. Preheat oven to 350°F.
  2. Combine first 8 ingredients in a large bowl; make a well in center of mixture. Combine pumpkin, butter, and eggs in another bowl and add to dry ingredients, stirring just until moistened. Fold in chopped apple and spoon into greased muffin pans, filling two-thirds full.
  3. Combine 3 tablespoons of sugar and 1 teaspoon of pumpkin pie spice; sprinkle evenly over muffins.
  4. Bake for 20 minutes or until golden brown. Remove from pans immediately, and cool on wire racks.

**Tip: No pumpkin pie spice? Substitute the following: 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp nutmeg & 1/8 tsp cloves. Mix together for the equivalent of 1 tablespoon pumpkin pie spice.

Somebody’s Watching Me

These faces have been staring at me in the shower for three years now. A little spooky, no?! I don’t know what’s worse, that, or the hideous tile behind those eyes! Welcome to my upstairs bathrooms. Aren’t you glad you popped over today?! Yes, anyone who’s commented about how my house must be perfect… eat your heart out on this little slice of the 70’s. I know you’re jealous.

I think these boys need to be put out to pasture. I no longer want to shower with my little friends. They’ve got to go. Time to start planning “Operation Bathroom Renovation”!
